Ingredients

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 4 salmon fillets

  • salt

  •  1 shallot, chopped

  •  2 cloves garlic

  •  1/2 lemon, zest only

  •  175ml / 2/3 cup chicken or fish stock

  •  125ml / 1/2 cup creme fraiche or heavy cream

  •  1/2 tbsp fresh dill

  •  salt to taste

Method

  1. Season the salmon fillets with salt and pepper on both sides.
  2. Heat olive oil in a pan over medium-high heat. Sear salmon for 4-5 minutes per side until golden. Remove and set aside.
  3. In the same pan, sauté the minced garlic until fragrant for about 1 minute.
  4. Pour in the heavy cream and lemon juice. Simmer for 2 minutes until it begins to slightly thicken.
  5. Stir in the fresh chopped dill and season the sauce with salt and pepper.
  6. Place the salmon back into the pan, spooning the sauce over the fillets. Serve immediately.
Chef's Notes & Tips

For an extra boost of flavor, add a splash of white wine to the garlic before adding the cream. Serve with steamed asparagus or wild rice for a complete mindful meal.

Chef’s Notes

For even cooking, bring your salmon to room temperature for 15-20 minutes before searing. This ensures the center cooks at the same rate as the exterior.

The sauce consistency is key: if it feels too thick, whisk in a splash of warm water or broth. If too thin, let it simmer for an extra 2 minutes without the salmon.

Substitute slow-cooked cream for a lighter coconut milk option if you prefer an anti-inflammatory, dairy-free alternative that still pairs beautifully with fresh dill.

The creamy dill sauce is a game-changer! I substituted the salmon for trout and it worked perfectly. Truly nourishing comfort food.

This is exactly the kind of gentle, anti-inflammatory meal I've been looking for. The slow prep was so meditative.
